The wedge sits on your whetstone and holds one angle steady. You pick from 14, 17, 20, or 25 degrees based on your knife type. Kitchen knives typically need 20 degrees; Asian blades work best at 14 or 17 degrees. Then you lay your knife on the wedge and stroke across the stone. The guide keeps your angle locked in, even if your hand drifts.
